Course Description:

Study and application of catering functions and services. Plan, organize, implement, and execute catering activities at the Chandelier Dining Room and other locations.

Required Materials:   

  • Uniform (Chef’s coat & pants)
  • Pocket thermometer
  • SDHA nametag
  • CRQ: FCNS 320

Course Objectives:

Upon completion of this course, students will be able to:

  • Demonstrate a working knowledge of the principles of food science and  techniques of food preparation by following standardized recipes and cooking and analyzing quantity food items for resale in the CDR.  
  • Demonstrate the ability to effectively manage human resources by planning, staffing, supervising, and evaluating performance of student staff for special events in the CDR.
  • Demonstrate the ability to procure food and to manage food production and presentation, distribution and service by writing order sheets, production sheets, and evaluations for a specified menu.  
  • Promote and merchandise specified food and nutrition services provided within the CDR operation and catered events to the university and community as a whole.  
  • Demonstrate the ability to analyze the cost/profit ratio within the CDR.
